I love it when I stumble upon the most delicious smoothie recipe. It's kind of like searching for buried treasure. Only instead of gold, it's a cold, creamy, delicious and nutritious drink that will keep me full all morning long. That's exactly how I feel about my blueberry smoothie recipe. It tastes just like blueberry pie! What more could you hope for in a smoothie?
Well, actually, this one I can’t take full credit for. J.P. was in the kitchen preparing his morning smoothie, and as I was perched on a kitchen stool enjoying my green coffee, my mind was spinning: “what is he making? Is that even going to taste good?” I watched him put the chia seeds in the blender. Then the cashews. Then the lumuca powder, coconut milk, maple syrup, blueberries, and vanilla. It was like he was spring cleaning the baking cupboard!
All my fears were put to rest though when I had my first sip: this smoothie recipe turned out AMAZING.
The sweetness of the maple syrup really brings out the vanilla and blueberry flavors. The pecans add a nice crust like flavor making this the perfect blueberry pie smoothie. For breakfast! I twisted his arm very hard to get him to add some goji berries, and we are both glad he did – the tartness from the berries adds a refreshing balance to the sweetness of the other ingredients.
In addition to tasting great, this blueberry smoothie recipe is also nutritious, and can help you get a healthy start to your day. It turns out blueberries are high in nutrients like vitamins C and K, Manganese, and antioxidants. They also help reduce DNA damage which may help protect against signs of aging and cancer. The nuts and chia seeds provide a boost of fiber and protein. I call this a breakfast win!

Blueberry Smoothie - tastes just like blueberry pie!
Ingredients
- 1 Tbsp chia seeds
- 1/4 Cup pecans
- 1/2 Cup cashews soaked 2-4 hours
- 1 Tbsp lumuca powder
- 1 Cup water or coconut milk for a creamier taste
- 1 Tbsp maple syrup
- 1 Tbsp goji berries
- 2 Cups frozen blueberries
- 1 tsp vanilla powder
- pinch salt
Instructions
- Place the chia seeds in your high powered blender and blend into a meal.
- Add the pecans, cashews, lumuca powder, and water or coconut milk, and maple syrup; puree until smooth.
- Add the goji berries, frozen blueberries, vanilla powder, and pinch of salt; blend until creamy.
