You are going to LOVE this creamy, rich, blueberry smoothie – it's the perfect sweet treat!
Blueberries are one of my favorite fruits. Especially fresh local, organically grown blueberries. Their sweetness and juicy, slightly-acidic flavour are just so delightful and refreshing. Not to mention how good I feel when I have a handful – or in this case, glassful – of the little gems. I can just feel all the health benefits these little berries as they work their way through my body. Some of these include many antioxidants, loads of Vitamins C and K, Maganese, and they're super hydrating: blueberries are about 85% water! Hello fresher looking skin and well functioning joints!
During blueberry season, I haul my butt to the farmer's market and stock up on these tiny blue gems. They freeze SO well, and I can make sure I have an ample supply throughout the winter months. I mean, why NOT enjoy the fresh sunshine flavor and nutrition of blueberries year round. Right?
My favorite way to enjoy blueberries is simply in a bowl with my vanilla cashew cream, or, by tossing a handful or two into my favorite blueberry smoothie.
To be honest, almost every time I blend a smoothie with blueberries, it doesn't look all that pretty because I usually add spinach. This time though, I forwent the greens so I could get that beautiful, blueberry deep, blue-purple color. If you don't care about appearances though (after all, true beauty is on the inside) add a cup or two of fresh spinach to your smoothie – the fibre from Popeye's favorite snack will leave you feeling fuller longer.
