Bok choy in a smoothie? Had I not tried my own, I would have thought it was a bad idea.
Last week-end, I visited a small organic farm and they had lots of leafy greens including bok choy. I have received bok choy in my CSA baskets in the past, but just randomly put it in my smoothies without a recipe before it went bad. I did make some really great tasting smoothies with it, but there were others that were a complete fail.
I opened the fridge yesterday and saw the bok choy starring at me. I knew I had to make something quick because it was starting to look limp! I decided to try a coconut and bok choy smoothie. It is not a very sweet smoothie, but you could always add a date or two to rectify that problem.
Coconut Bok Choy Smoothie (moonlighting as a shake)
- 1/2 an avocado
- 1 ripe banana
- 1 head of bok choy
- 1 apple- cored and chopped
- 1 cup of homemade coconut milk
- Ice- I used a handful
- Optional- 1 or 2 dates, depending on your sweet tooth. I used none.
- Wash all your fruits and veggies first.
- Place all the ingredients in no particular order in your blender; I used my Blendtec
What I loved most about this particular smoothie was how thick it was from the banana and avocado. It is almost like a green milkshake. Grab a straw or perhaps a spoon and gobble it up. You may need to make seconds for those watching you eat it.

Jenn Savedge from The Green Parent sautés her with olive and garlic, but adds ginger. I love ginger, so this is right up my alley.
Karen Lee from EcoKaren makes kimichi. I have never tried it, but it does look delicious. She mentioned that she interchanges bok choy and nappa cabbage depending on what she finds at the farmers market.
