Almond Date Balls - GoodGirlGoneGreen

Tomorrow is Earth Hour where people across the globe will be turning off their lights for one full hour (8:30-9:30pm) to help fight climate change and take a stand. I will of course be turning off the lights, and either head out for a nice walk or just sit and chat with J.P.

I wanted to create a tasty treat that I could munch on during that hour that requires zero energy to prepare. I thought of different snacks that I typically make, and came to the conclusion I more often than not use my food processor, even if it is to chop something. And, the reason is because it is faster, just plain easier and well- I am lazy. With that said, I got out a chopping knife and began creating.

Almond Date Balls

Ingredients

  • 10 dates
  • 1 cup of whole almonds if time permits soaked and dehydrated
  • 1 tbsp of cinnamon
  • 1 tsp or more of almond or vanilla extract or flavor
  • Optional: Add unsweetened chocolate powder or simply roll the balls in the chocolate powder

Instructions

  • Take all the pits out of the dates.
  • Chop the dates up on a wooden cutting board.
  • Once they are chopped, place them in a mixing bowl and continue to mix them with a fork to create more of a paste.
  • Now take 1/2 or all the almonds depending how big your cutting board is, and being chopping. This could take a few minutes.
  • Add the chopped almonds to the dates.
  • Add the vanilla or almond extract and cinnamon to the dates and almonds and combine. You can use a fork, spoon or if you feel like getting a little dirty use your hands.
  • Once incorporated to your liking, take heaping scoops and shape into balls.
  • I put my in the freezer to firm them up, but you can eat as is or put in the fridge.

So, after reading how to make the almond date balls you are thinking- “I don’t like to chop.” (Of course, this can be made in the food processor, but that wouldn't be any fun now would it?)

Boy- do I ever have an easy snack for you then.

Date Boats

Ingredients

  • 1 date
  • 4 almonds

Instructions

  • Cut date in half.
  • Take pit out of date.
  • Place 2 almonds in each date.
  • Put in mouth and chew.

Now wasn't that the easiest snack prep ever?

    Soooo glad you are taking a “stance”…though I THINK you mean STAND, though both are a moot point with>>>

    Save your sanctimonious, do nothing, Limousine-Liberal-Symbolism-Over-Substance-Do Goodership and keep you lights on and read “The Wealth of Nations” by Adam Smith. You would be better served to use your hour learning why your Greenie bullish*t is an utter sham.

    Besides, I’m turing on EVERY INCANDESCENT BULB IN BOTH OF MY ENORMOUS HOUSES (though smaller than AlGore’s 10000 square foot Nashville MANSION AND his $9 million Montecito MANSION) AND A FEW FLASHLIGHTS JUST TO HONOR YOUR INCREDIBLE “SACRIFICE”.

    When AlGore starts flying coach and accepting his Peace Prizes via SKYPE, then I’ll give a d*mn about your ridiculous “cause”.

      Just wanted to say my dates are from California, NOT IMPORTED! My raw chocolate is fair-trade and organic. I have to check about my cinnamon though.

    And I am like, SO POSITIVELY CERTAIN that you will be able to find ***AaaaLL*** those ingredients grown LOCALLY, **NO***DOUBT**!

    Especially that FAIR TRADE, grown three blocks away in the vacant lot in the ghetto CHOCOLATE that didn’t take ANY RESOURCES whatsoever to process into cocoa powder.

    I think this is the PERFECT snack. I love both almonds and dates and must admit that in my meat eating days we used to wrap a slice of bacon around them and broil … now I will leave out the bacon, add in the spices and make into balls. GREAT IDEA!!! Thank you so much for caring about our earth and for sharing this!

    Thank you so much for submitting these on Teagan’s Travels last week! I just marvel at your ability to make up something totally new. I am a disaster at that and yet these looks so delish! And thanks for making me aware of Earth Hour! I missed it and can’t say if we were truly outside but I am going to observe it tomorrow night instead after dinner by taking my little ones for a walk!
