Ruby Red Apple Juice

Every morning, without fail, I have a nice big juice, and how I feel, and what fruits and veggies I have in the fridge determines what juice I will enjoy, and sometimes not enjoy. This past week, I received 3 beets in my local CSA basket, and knew right away they would end up in a juice; what I didn’t expect was that my juice would taste like liquid candy, and have such a beautiful ruby red colour.

The sweetness of the apples, mixed with the beets makes this the perfect combination. I tend to add apples or oranges to my juices because I can’t do a 100% vegetable juice. I have tried. Perhaps, my vegetable combo is off.

If you don’t have a juicer, you could try the juice setting on your high powered blender. I haven’t tried it, so I can’t vouch for the taste or how well it will blend. I may experiment and try it myself using my Blendtec.

Ruby Red Apple Juice

Yields: 2 cups

  • 1 large beet
  • 4 regular apples (I used 8 really small apples similar in size to crab apples)
  • 3-4 small carrots

Juice all 3 ingredients, and enjoy.
