Cookie Dough Bites

I don’t remember the last time I had cookie dough. I use to love gobbling up cookie dough ice cream like it was going out of style. Since changing up my eating habits, I thought I had to say good-bye to cookie dough forever. But I don’t, and either do you. This heathy treat is scrumptious and just as delicious as its non-vegan counterpart. I actually think it tastes better. The best part is you don’t have to make cookies to make this cookie dough. All you need are 3 simple ingredients- dates, coconut flakes and chocolate chips. Simple enough.

After making the recipe, I realized the variations of the recipe can be endless. I bet a tablespoon or two of peanut, cashew or almond butter would give it a super rich flavor, or perhaps adding some raisins or any dried fruit. Let your imagination go wild, and let me know how you enjoy your cookie dough.

Ingredients

  • 20 dates, soaked for 1-2 hours, and drained
  • 1/2 cup of coconut butter, or homemade coconut butter
  • 1/2 cup of dried coconut flakes
  • 1/2 cup of chocolate chips or you can make a homemade version
  • 1tsp or more depending on taste of vanilla extra
  • 1/2 cup of cashew butter, optional, but I highly recommend it

Place the dates and coconut butter in a food processor and mix until well combined.

Transfer the mixture to a bowl and add the coconut flakes and incorporate well.

After the coconut flakes are well combined, mix in the chocolate chips.

Roll the cookie dough into small balls and place on a glass or stainless steel cookie sheet and place in the freezer until firm.

      What’s so awesome about these is that they aren’t “really” cookie dough, but probably taste just like cookie dough! Sounds so YUMMY! Thanks for sharing!

      These sound really good — and since going gluten free I 1/2 years ago I haven’t had a bit of cookie dough (most gluten free cookies I’ve made are made with garbonzo flour and is NASTY raw) I’m adding this to my must try list!

      Those look so delicious! Unfortunately my kids don’t like coconut, so if I made them I’d have to eat them all myself. On the other hands, that’s not such a bad thing…

      I made these cookie dough balls today with Medjool dates, and though the cookie dough balls I made are dark brown which hides the chocolate chips, I still loved the flavor, and my husband loves them, too! I’m guessing I could lighten up the mixture by using Halawi dates or another lighter variety. What kind of dates did you use in this recipe?

        Oh, I am glad you liked them. I used medjool dates, I soaked them. I find when I soak them sometimes they lighten up, and it also makes it easier for mixing. The second time I made the cookie dough bites, I added 1/2 cup of cashew butter or just cashews or any nut butter. I bet peanut butter would taste good.They tasted even better! :)

          Cashew butter sounds wonderful with this recipe! I’ll have to try that out next time. I soaked my medjool dates for about 2 hours, but they didn’t lighten up at all for some reason. The dates I soaked were the juiciest dates I’ve ever tasted, though.
          This recipe is a hit with my family, and I’ll have fun trying variations on it for a while!
